When I woke up this morning, I looked down into the valley – as I do most mornings.

And on that pond were floating two big Canada Geese. They are pretty animals but there are also far too many of them and they are listed on the pest animal register, so no restrictions on hunting. In 2011 their status changed from game bird to uncontrolled bird.

So I packed my backpack and went for a walk down into the valley, stalked up from behind one of the pines and they were still there. Using a fence post as a rest, I shot one of them at ~75m just slightly front under the wing. It dropped dead immediately. I picked it up and carried it up to the cleaning area where I cut the breast open just under the neck, pulled the skin with feathers off to reveal the breast which I cut out into two nice steaks.

The breast fillets then went into a marinade from orange zest and juice, garlic and soy sauce with a bit of sugar. Next time I’ll add more sugar and maybe leave out the rest – I have not decided yet. The fillets were still warm when I marinaded them.

10 hours later it was time for dinner and we cooked some potatoes for a mash, created a salad and oven baked the fillets in the marinade while basting about every 15 minutes. Baking time was approximately 40 minutes at 160 degrees fan forced (Takes longer due to the basting).
